Zucchini Noodle Cake

Ingredients

4 egg (lightly beaten)
170gpacket noodles
2 Zucchini (grated)
1tbspmargarine
3⁄4Cupreduced fat mozaarella cheese

Instructions

  1. Cook noodles according to packet directions. Drain and place in a large bowl, then stir through noodle seasoning, eggs, cheese and zucchini.
  2. Heat margarine in a pan, take 1/2 a cup of mixture and cook for approximately  1-2 minutes on each side until golden. Repeat until all mixture is used.
  3. Drain on absorbent paper
  4. Eat immediately, or cool and store in an air-tight container in fridge.

Yeah I agree, they are more like savory snacks than actual cakes

 Yum, try sprinkling a little chilli powder over when frying to give some extra zing!
