Try this simple, tasty and nutritious idea for incorporating pecans into your favourite meal. Pecans lend themselves to both sweet and savoury recipes including stir fries, salads, casseroles and desserts.
Ingredients
| 2 | tbsp | canola oil |
| 1 | Cup | corn kernels |
| 1 | Teaspoon | Curry Powder |
| 1 | egg | |
| 1 | Cup | milk |
| 1 | Teaspoon | Mixed Spice |
| 2 | onion (chopped) | |
| pepper (to taste) | ||
| 1⁄2 | Cup | rolled oats |
| 1 | Cup | wholemeal self-raising flour |
| 125 | g | pecans (chopped) |
Instructions

Whisk egg with milk and oil.

Stir in curry powder, corn, oats, pecans and onions until well combined.

Gently fold through flour and season to taste.

Cover and refrigerate for at least 30 minutes.

Heat oil in a fry pan and cook tablespoons of fritter mixture for 2 minutes each side or until cooked through.

Serve with natural yoghurt, ricotta or salad for a light meal or snack.
