Spiced Pecan and Corn Fritters

Ingredients

2tbspcanola oil
1Cupcorn kernels
1TeaspoonCurry Powder
1 egg
1Cupmilk
1TeaspoonMixed Spice
2 onion (chopped)
  pepper (to taste)
1⁄2Cuprolled oats
1Cupwholemeal self-raising flour
125gpecans (chopped)

Instructions

  1. Whisk egg with milk and oil. 
  2. Stir in curry powder, corn, oats, pecans and onions until well combined.
  3. Gently fold through flour and season to taste.
  4. Cover and refrigerate for at least 30 minutes.
  5. Heat oil in a fry pan and cook tablespoons of fritter mixture for 2 minutes each side or until cooked through.
  6. Serve with natural yoghurt, ricotta or salad for a light meal or snack.
