Porridge with apricot compote

Add sweetness and colour to your morning porridge with this flavoursome topping.


1 1⁄2Cupoats
75Gramdried apricots (chopped)
2⁄3Cupfresh orange juice
1 cinnamon stick
2 cardamon pods (bruised)
3 1⁄4Cupwater (Or 1/2 cup of water and 1 cup of milk for creamy oats)
2Tablespoon (Metric)chopped pistachio kernels


  1. Combine apricots, orange juice, cinnamon stick and cardamon pods in a saucepan. Simmer over low-medium heat for 5 minutes, or until syrupy and apricots are plump.
  2. Combine oats in a separate saucepan with water (or water and milk for creamy oats). Bring to the boil, stirring occasionally, over a high heat. Reduce heat to low and simmer, stirring constantly, for 5-6 minutes or until thick.
  3. Top each bowl of quick porridge with 1/4 of the apricot compote and 2 teaspoons pistachios.
