Ingredients

2tbspolive oil
5 onions (chopped into 1-2 cm thick wedges)
1Pinchsea salt
1Pinchblack peper (freshly grounded)
1⁄2Teaspoonturmeric
1Teaspoonfenugreek seeds (or yellow mustard seeds)
1⁄2Teaspoondried mint
2tbspplain flour
700mlvegetable stock
1 cinnamon stick
1 lemon (juiced)
1Teaspoonhoney
1⁄2Cupflat leaf parsley (chopped)

Instructions

  1. Heat one tablespoon of oil in a heavy based pan over medium heat. Add onion, salt and pepper. Cover and sweat for 12 -15 minutes until onions are soft, lifting the lid and stirring occasionally. Remove the lid and increase the heat very slightly.
  2. Add spices, dried mint and remaining oil, then stir in the flour. Cook, stirring frequently, for 3-4 minutes. Gradually pour in the stock, whisking as you go to prevent any lumps forming. Drop in cinnamon stick and cook over a low heat, partially covered with the lid, for 30-40 minutes.
  3. Stir in lemon juice and honey and season according to taste. Discard the cinnamon stick.
  4. Ladle soup into warm bowls and sprinkle with chopped parsley to serve.
