Ingredients

1⁄2Teaspoonbicarbonate soda
1 egg (lightly beaten)
2Cupwholemeal self-raising flour
2tbsporange breakfast marmalade
1⁄2Cuporange juice (freshly squeezed)
1⁄4Cupsugar (brown)
1⁄2Cupvanilla yogurt (low fat)

Instructions

  1. Pre-heat oven to 200o C.
  2. Lightly coat a 12-cup muffin tray with cooking spray.
  3. Sift the flour and bicarbonate soda into a medium bowl. Combine the yoghurt, orange juice and sugar. Add mixture to the flour. Add the egg and stir to combine, being careful not to over mix.
  4. Spoon mixture into the prepared tray and bake for 12 to 15 minutes.
  5. Heat marmalade in the microwave for 30 seconds. Brush over cooked muffins.

Notes

Add a few teaspoons of poppy seeds for a little variation!

Comments

It is very interesting to use orange in muffins. It is very healthy muffin. Especially during winter times.

Great basic no-fail recipe. Use mashed banana & crushed nuts instead off orange. Replace low fat yoghurt with low fat milk and make savoury muffins using corn, chives, low fat grated cheese and finely cut spring onion.
