Ingredients

1⁄4Cupalmonds (ground)
1 banana (very ripe, mashed)
1Cupdates (finely chopped)
1Cuprasins (finely chopped)
3⁄4Cupwalnuts (finely chopped)
1⁄2Cupwheat germ
1⁄4Cupcoconut (shredded)
1tbsplemon zest

Instructions

  1. Mix together dates, raisins, banana, walnuts, ground almonds, lemon zest and ¼ cup of wheat germ.
  2. Combine the remaining ¼ cup of wheat germ with the coconut.
  3. Roll fruit mixture into balls and then roll in the coconut mixture.
  4. Chill until firm.

Notes

Any type of nuts can be used in this recipe. Walnuts and brazil nuts are particually beneficial because of their high antioxidant content. Nuts also provide a good source of unsaturated fats, protein and fibre, but limit intake to about one handful a day as nuts are also high in energy.
