Homemade ham and beans on toast

Description

Create your own baked beans with this tasty and low salt version.

Ingredients

1 brown onion (finely chopped)
1CloveGarlic (minced)
100Gram97% fat free ham (chopped)
400Gramcan no-added-salt chopped tomatoes
800Gramcanned cannellini beans (rinsed)
8Slicemultigrain toast
  chopped parsley (to serve)
  green salad (to serve)

Instructions

  1. Spray a medium saucepan with oil and place over medium heat. Add onion and garlic to pan and cook for 3 minutes.
  2. Stir in tomatoes, ham and 1 cup water. Bring to the boil. Reduce heat to low and simmer, stirring occasionally, for 5 minutes.
  3. Add cannellini beans and stir to combine. Simmer, stirring occasionally, for 10 minutes until sauce thickens slightly. Serve on toast, season to taste and garnish with parsley. Serve with a salad.
