Ingredients

1tbspwheat bran
1⁄2Cuponion (chopped)
1tbspparsley (chopped)
1 egg (whisked)
2Teaspoonolive oil
8slibeetroot
8sliTomato
1Cuplettuce (shredded)
4 Hamburger buns (wholemeal or multigrain)
  sprinkle of pepper (freshly ground)
200glean beef (minced)

Instructions

  1. Combine mince, bran, onion, parsley and egg. Mix well.
  2. Divide the mixture into 4 equal portions and shape each into a patty.
  3. Heat oil in a large pan and cook patties for 3-4 minutes on each side.
  4. Drain on paper towel or butcher's paper to absorb excess fat.
  5. Slice buns in half and toast the cut sides.
  6. Place a hamburger, slices of beetroot, tomato and some shredded lettuce on one half of each bun. Add a little ground pepper, top with other half of bun and serve.

This great recipe is healthy for a number of reasons. The burgers are high in fibre because they contain wheat bran, and additional fibre is provided when you eat the burger in a wholegrain bread roll. Eating a burger that is packed with vegetables can help you reach your recommended daily intake of 5 servings of vegetables, and the patty itself is an excellent source of protein. It's also important to remember that homemade hamburgers are healthier than purchased hamburgers - they are higher in fibre and lower in salt and fat.
