Grilled Garlic Mushrooms with a Garlic Yoghurt Dressing
Description
Try as a warm side dish or hearty snack that is low GI, high in dietary fibre, protein and many of the B group vitamins
Ingredients
| 1 | tbsp | dairy spread |
| 1 | clv | Garlic (crushed) |
| 4 | field mushrooms (large) | |
| 1⁄2 | red capsicum (diced) | |
| 2 | tbsp | fresh parsely (chopped) |
| 1 | Pinch | pepper |
| 1 | Cup | low-fat yoghurt |
Instructions
- Heat dairy spread and half the garlic in a frypan until melted. Add mushrooms and saute for 2-3 minutes.
- Remove from frypan and place under a hot grill and cook for a further 5 minutes or until tender.
- Combine yoghurt, red capsicum, parsley and remaining garlic and season to taste.
- Top mushrooms with yoghurt dressing and serve.
