Green eggs and ham

A tasty breakfast that so easy, even the kids can make it!


4 Eggs
1⁄4Cupskim milk
3Teaspoon (Metric)basil pesto
100Gram97% fat free shaved ham
2Slicemultigrain bread (toasted, cut into 'soldiers')


  1. Place eggs, milk and pesto in a large microwave-safe bowl.
  2. Whisk ingredients with a fork, until well combined. Place in microwave and cook on HIGH for 30 seconds. Remove bowl. Stir. Return to microwave and cook for another 30 seconds. Stir. Repeat 1–2 more times or until scrambled eggs are soft and moist.
  3. Spoon eggs onto 2 serving plates with slices of ham and toast ‘soldiers’. Serve immediately (with a cup of tea or coffee for Mum).
