Ingredients

3⁄4Cupalmonds (toasted and chopped)
2Cupdried fruit
2Litreice cream (low fat)
1 1⁄2tMixed Spice
60mlapple juice or brandy
1Cuplightly roasted slithered almonds (to garnish)

Instructions

  1. Place fruit in a large mixing bowl, pour over apple juice (or brandy) over fruit and sit for a few hours.
  2. Add almonds and mixed spice and fold together with softened ice-cream.
  3. Line a 6-8 cup pudding basin with plastic wrap and spoon in mixture. Cover with plastic wrap and freeze overnight.
  4. To serve, cut into cake size slices and garnish with a sprinkle of lightly roasted slithered almonds.
