A summer dinner party dessert
Ingredients
| 3⁄4 | Cup | almonds (toasted and chopped) |
| 2 | Cup | dried fruit |
| 2 | Litre | ice cream (low fat) |
| 1 1⁄2 | t | Mixed Spice |
| 60 | ml | apple juice or brandy |
| 1 | Cup | lightly roasted slithered almonds (to garnish) |
Instructions
- Place fruit in a large mixing bowl, pour over apple juice (or brandy) over fruit and sit for a few hours.
- Add almonds and mixed spice and fold together with softened ice-cream.
- Line a 6-8 cup pudding basin with plastic wrap and spoon in mixture. Cover with plastic wrap and freeze overnight.
- To serve, cut into cake size slices and garnish with a sprinkle of lightly roasted slithered almonds.
