Ingredients
| 1 | Teaspoon | bicarbonate soda |

| 250 | g | pecan |
| 250 | g | sugar (caster) |
| 5 | Large eggs | |
| 2 | Large lemon |
Instructions
- Wash fruit, cover with cold water in a large saucepan and bring to boil. Simmer for 1 hour or until soft. Remove fruit from saucepan, chop, remove seeds and allow to cool.
- Preheat oven to 180C. Line a 20cm cake tin with baking paper.
- Beat eggs and sugar together until creamy. Blend pecans in a food processor with half of the egg mixture until smooth. Remove to a bowl
- Blend cooled citrus together with remaining egg mixture until smooth.
- Combine the two mixtures, then add the bicarbonate soda.
- Pour into cake tin and bake for 1 hour. Cool and serve.

Going to try this receipe as it is prepared without flour. I suppose the bi-carbonate soda causes it to rise?
