Ingredients
| 375 | g | Chicken (cooked skinless fillets cut into strips) |
| 4 | Shallots (diced) | |
| 1⁄2 | capsicum (red sliced) | |
| 150 | g | Snow Peas (blanched) |
| 1 | Cup | cooked pasta ( noddles or pasta) |
| 2 | oranges (1 cut into pieces and 1 for juice) | |
| 1⁄2 | Cup | pecans (chopped) |
| 1 | t | reduced salt soy sauce |
| pepper (freshly ground ) |
Instructions
- Place chicken, noodles, shallots, snow peas, capsicum, orange pieces and pecans in a salad bowl.
- Toss to combine.
- Combine orange juice and soy sauce together in a small bowl.
- Pour over salad and toss to coat ingredients.
- Season to taste with pepper.
- Refrigerate until ready to serve.
