Citrus Chicken Salad

Ingredients

375gChicken (cooked skinless fillets cut into strips)
4 Shallots (diced)
1⁄2 capsicum (red sliced)
150gSnow Peas (blanched)
1Cupcooked pasta ( noddles or pasta)
2 oranges (1 cut into pieces and 1 for juice)
1⁄2Cuppecans (chopped)
1treduced salt soy sauce
  pepper (freshly ground )

Instructions

  1. Place chicken, noodles, shallots, snow peas, capsicum, orange pieces and pecans in a salad bowl.
  2. Toss to combine.
  3. Combine orange juice and soy sauce together in a small bowl.
  4. Pour over salad and toss to coat ingredients.
  5. Season to taste with pepper.
  6. Refrigerate until ready to serve.
