Ingredients

1tbicarbonate soda
5 egg
2 lemon
1 Orange
250gpecan
250gcaster sugar

Instructions

  1. Wash fruit and place in large saucepan. Cover with cold water. Bring to the boil and simmer for 1 hour or until soft.
  2. Remove fruit gently from saucepan, chop, remove seeds and allow to cool.
  3. Preheat oven to 180oC. Line a 20cm cake tin with baking paper.
  4. Beat eggs and sugar together until creamy.
  5. Blend pecans in a food processor with half of the egg mixture until smooth. Pour into a bowl.
  6. Blend cooled citrus together with remaining egg mixture until smooth.
  7. Combine the two mixtures, and stir in the bicarbonate soda.
  8. Pour into cake tin and bake for 1 hour. Cool and serve.
