Ingredients
| 1 | t | bicarbonate soda |
| 5 | egg | |
| 2 | lemon | |
| 1 | Orange | |
| 250 | g | pecan |
| 250 | g | caster sugar |
Instructions
- Wash fruit and place in large saucepan. Cover with cold water. Bring to the boil and simmer for 1 hour or until soft.
- Remove fruit gently from saucepan, chop, remove seeds and allow to cool.
- Preheat oven to 180oC. Line a 20cm cake tin with baking paper.
- Beat eggs and sugar together until creamy.
- Blend pecans in a food processor with half of the egg mixture until smooth. Pour into a bowl.
- Blend cooled citrus together with remaining egg mixture until smooth.
- Combine the two mixtures, and stir in the bicarbonate soda.
- Pour into cake tin and bake for 1 hour. Cool and serve.
