Beans with pecans and macadamias

Description

Enjoy this deliciously crunchy salad, with a nutty flavour and a protein punch.

Ingredients

175Gramgreen beans (trimmed)
1Tablespoon (Metric)lemon juice
1Tablespoon (Metric)Macadamia oil
75Gramricotta
1Teaspoon (Metric)honey
1⁄2Teaspoon (Metric)Dijon Mustard
50GramRaw pecans (roughly chopped)
 Centigramblack pepper (to taste)

Instructions

  1. Place beans in a saucepan of boiling water and blanch for 1-2 minutes. Drain well and place on a serving plate.
  2. Heat a small saucepan over medium low heat. Add the lemon juice, macadamia oil, honey, dijon and nuts. Season with pepper to taste. Heat for 1-2 minutes, stirring until honey has dissolved. Spoon warm dressing and nuts over the beans and serve immediately.
