Ingredients
| 2 | onion (chopped) | |

| 375 | g | red lentils |
| 1 | Carrot (chopped) | |
| 2 | celery stalk (chopped) | |
| 700 | ml | vegetable stock (salt reduced) |
| 300 | ml | water |
Instructions
- Chop all vegetables and place in pot with lentils, water and stock.
- Bring to the boil and simmer for 1 hr, stirring occasionally.
- Serve when lentils are soft and thick.
