Description

Beans are a great source of fibre and protein and this salad is an excellent side to any dish.

Ingredients

440GramBeans (can of 3 or 4 bean mix, chickpeas, or haricot beans, cooked and cooled)
1⁄2 Cucumber (diced)
1 Tomato (roughly chopped)
1⁄2 onion (chopped)
2Tablespoon (Metric)balsamic vinegar
1Tablespoon (Metric)mint
1Tablespoon (Metric)parsley
 Pinchpepper

Instructions

  1. In a bowl, mix beans, cucumber, tomato and onion.
  2. Add vinegar, olive oil, herbs and pepper.
  3. Toss to coat well.

Serve with grilled fish or another barbequed meat.
