Ingredients
| 4 | apple ((peeled, halved and cored)) | |
| 1 | Pinch | mint (to garnish) |
| 1 | Cup | sugar |
| 1 | Litre | pink grapefruit juice (and segments from 4 pink grapefruit to garnish) |
Instructions
- Combine juice, sugar and apple halves in a saucepan.
- Bring to the boil, then turn down to a gentle heat. Cover loosely and simmer over gentle heat for 20 - 30 minutes until apples are tender.
- Cool to room temperature and refrigerate.
- To serve, arrange poached apple onto serving plates and spoon over syrup.
- To serve, garnish with grapefruit segments and mint.
