Ingredients

4 apple ((peeled, halved and cored))
1Pinchmint (to garnish)
1Cupsugar
1Litrepink grapefruit juice (and segments from 4 pink grapefruit to garnish)

Instructions

  1. Combine juice, sugar and apple halves in a saucepan.
  2. Bring to the boil, then turn down to a gentle heat. Cover loosely and simmer over gentle heat for 20 - 30 minutes until apples are tender.
  3. Cool to room temperature and refrigerate.
  4. To serve, arrange poached apple onto serving plates and spoon over syrup.
  5. To serve, garnish with grapefruit segments and mint.
