Zucchini Noodle Cake (Makes 12)
Ingredients
- 2 x 85 g packets of fat free noodles
- 4 lightly beaten eggs
- ¾ cup grated mozzarella cheese
- 2 grated zucchinis
- 1 tablespoon of butter/margarine or oil
Method
- Cook noodles as per packet
- Drain and place in a large bowl
- Stir through the seasoning, eggs, cheese and zucchini
- Heat the butter or oil in a pan and cook approximately1/2 a cup of mixture for 1 – 2 minutes on each side until golden
- Drain on absorbent paper
- Cool in fridge.
