Zucchini Noodle Cake (Makes 12)

Ingredients

  • 2 x 85 g packets of fat free noodles
  • 4 lightly beaten eggs
  • ¾ cup grated mozzarella cheese
  • 2 grated zucchinis
  • 1 tablespoon of butter/margarine or oil

Method

  1. Cook noodles as per packet
  2. Drain and place in a large bowl
  3. Stir through the seasoning, eggs, cheese and zucchini
  4. Heat the butter or oil in a pan and cook approximately1/2 a cup of mixture for 1 – 2 minutes on each side until golden
  5. Drain on absorbent paper
  6. Cool in fridge.
