Flavour of the Month
Waldorf Wrap (serves 2)
Ingredients
- 1 cup of cold, cooked barbecued chicken, skin removed and chopped.
- 2 sticks celery, thinly sliced.
- 1 red apple diced.
- 2 tablespoons of sliced peacans
- 2 spring onions (shallots), chopped.
- 2 tablespoons of low-fat mayonnaise.
- 2 pieces wholemeal Lebanese bread.
- 2 tablespoons dijonnaise (optional; this is a mustard/mayonaise zest).
Method
- Combine chicken, celery, apple, pecans, spring onions and mayonaise.
- Spread Lebanese bread with dijonnaise.
- Pile chicken mixture onto bread and roll up.
- Cut diagonally and serve
