Waldorf Wrap (serves 2)

Ingredients

  • 1 cup of cold, cooked barbecued chicken, skin removed and chopped.
  • 2 sticks celery, thinly sliced.
  • 1 red apple diced.
  • 2 tablespoons of sliced peacans
  • 2 spring onions (shallots), chopped.
  • 2 tablespoons of low-fat mayonnaise.
  • 2 pieces wholemeal Lebanese bread.
  • 2 tablespoons dijonnaise (optional; this is a mustard/mayonaise zest).

Method

  1. Combine chicken, celery, apple, pecans, spring onions and mayonaise.
  2. Spread Lebanese bread with dijonnaise.
  3. Pile chicken mixture onto bread and roll up.
  4. Cut diagonally and serve
