Vegetable Fritters

Ingredients (Serves 4)

  • 1 large grated carrot
  • 1 grated potato, squeezed to remove excess water
  • 2 grated zucchini
  • 2 eggs, lightly beaten
  • 1 tablespoon self-raising flour
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh chives
  • ¼ teaspoon ground nutmeg
  • freshly ground pepper
  • 2 teaspoons olive oil.

Method

  1. Mix carrot, potato, zucchini, eggs, flour, parsley, chives, nutmeg and pepper in a bowl.
  2. Heat teaspoon of oil in a non stick frypan and add tablespoonfuls of mixture to pan.
  3. Flatten mixture slightly and cook 4-5 minutes each side or until golden brown.
  4. Drain on absorbent paper, set aside and keep warm.
  5. Heat remaining oil and repeat with remaining mixture.
