SUMMER PUDDING (serves 6)

Method

Place fruit and sugar in microwave and cook on high for a few minutes or until the fruit is soft, stirring the fruit at half time.
- Drain the fruit, reserving the juice to serve with the pudding.
- Line a narrow, deep bowl with the slices of bread, using pieces of bread to fill any gaps.
- Put the fruit in the bread case. Make a lid with the bread slices.
- Cover with waxed paper and a heavy plate to press on top.
- Refrigerate overnight.
- Peal off paper and upturn pudding onto a serving dish.
- Slice and serve with yoghurt or ice cream and reserved juices.
