Flavour of the Month

SUMMER PUDDING (serves 6)

Ingredients

  • 4 cups of assorted berries (mulberries, raspberries, strawberries, blueberries)

  • 100g sugar
  • 10 slices bread, crusts removed
  • thick yoghurt or icecream

Method

  1. Place fruit and sugar in microwave and cook on high for a few minutes or until the fruit is soft, stirring the fruit at half time.

  2. Drain the fruit, reserving the juice to serve with the pudding.
  3. Line a narrow, deep bowl with the slices of bread, using pieces of bread to fill any gaps.
  4. Put the fruit in the bread case. Make a lid with the bread slices.
  5. Cover with waxed paper and a heavy plate to press on top.
  6. Refrigerate overnight.
  7. Peal off paper and upturn pudding onto a serving dish.
  8. Slice and serve with yoghurt or ice cream and reserved juices.
