Stir-Fry: Pork, Pecan and Avocado
Ingredients
- 2 tablespoons vegetable oil
- 2 cloves garlic, crushed
- 500g pork fillet, thinly sliced
- 1 capsicum, chopped
- 100g snow peas
- 1 cup pecans
- 4 spring onions (shallots), chopped
- 2 tablespoons sweet chilli sauce
- 2 tablespoons hoisin sauce
- 1 cup bean sprouts
- 1 avocado, sliced
Method
- Heat the oil in a wok or deep-sided pan.
- Add the garlic and stir-fry for 1 minute.
- Add the pork strips and capsicum. Toss and cook for 3 minutes.
- Add the snow peas, pecans, spring onions and sauces and cook for 1 minute.
- Add the bean sprouts and the avocado and toss gently to mix through. Serve immediately.
