Stir-Fry: Pork, Pecan and Avocado

Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, crushed
  • 500g pork fillet, thinly sliced
  • 1 capsicum, chopped
  • 100g snow peas
  • 1 cup pecans
  • 4 spring onions (shallots), chopped
  • 2 tablespoons sweet chilli sauce
  • 2 tablespoons hoisin sauce
  • 1 cup bean sprouts
  • 1 avocado, sliced

Method

  1. Heat the oil in a wok or deep-sided pan.
  2. Add the garlic and stir-fry for 1 minute.
  3. Add the pork strips and capsicum. Toss and cook for 3 minutes.
  4. Add the snow peas, pecans, spring onions and sauces and cook for 1 minute.
  5. Add the bean sprouts and the avocado and toss gently to mix through. Serve immediately.
