Oatcakes
Ingredients
- 500g fine oatmeal
- 1 heaped cup plain flour
- ½ teaspoon bi-carbonate soda
- 1 teaspoon salt
- ½ cup oil (eg. Macadamia, light olive oil)
- 2 cup boiling water
Method
- Preheat oven to 200C.
- Using a little oil, grease an oven tray.
- Mix dry ingredients and oil.
- Add boiling water, stirring until mixture binds to form a ball.
- Turn out, knead lightly and roll into sheet (about 3mm)
- Cut into triangles or circles and place on greased tray.
- Bake in the oven for 15 minutes or until the edges start to
curl slightly.
- Cool on rack.
- Serve plain or with sweet or savoury toppings.
