Oatcakes

Ingredients

  • 500g fine oatmeal
  • 1 heaped cup plain flour
  • ½ teaspoon bi-carbonate soda
  • 1 teaspoon salt
  • ½ cup oil (eg. Macadamia, light olive oil)
  • 2 cup boiling water

Method

  1. Preheat oven to 200C.
  2. Using a little oil, grease an oven tray.
  3. Mix dry ingredients and oil.
  4. Add boiling water, stirring until mixture binds to form a ball.
  5. Turn out, knead lightly and roll into sheet (about 3mm)
  6. Cut into triangles or circles and place on greased tray.
  7. Bake in the oven for 15 minutes or until the edges start to curl slightly.
  8. Cool on rack.
  9. Serve plain or with sweet or savoury toppings.
