Mildura Truffles
Ingredients
Makes approximately 20.
- 1 cup dates, finely chopped
- 1 cup raisins, finely chopped
- 1 very ripe banana, mashed
- ¾ cup walnuts, finely chopped
- ¼ cup ground almonds
- 1 tablespoon finely grated lemon zest
- ½ cup wheat germ
- ¼ cup coconut.
Method
- Mix together evenly the dates, raisins, banana, walnuts, ground almonds, lemon zest and ¼ cup of the wheat germ.
- Combine the remaining ¼ cup of wheat germ with the coconut.
- Roll the fruit into balls and roll in the coconut mixture.
- Chill until firm.
