Mildura Truffles

Ingredients

Makes approximately 20.

  • 1 cup dates, finely chopped
  • 1 cup raisins, finely chopped
  • 1 very ripe banana, mashed
  • ¾ cup walnuts, finely chopped
  • ¼ cup ground almonds
  • 1 tablespoon finely grated lemon zest
  • ½ cup wheat germ
  • ¼ cup coconut.

Method

  1. Mix together evenly the dates, raisins, banana, walnuts, ground almonds, lemon zest and ¼ cup of the wheat germ.
  2. Combine the remaining ¼ cup of wheat germ with the coconut.
  3. Roll the fruit into balls and roll in the coconut mixture.
  4. Chill until firm.
