Marshmallow Fruit Yoghurt

Ingredients

  • 1kg tub of natural light yoghurt
  • 5 mandarins (fridged)
  • 1 well drained 250g tin of pineapple pieces (fridged)
  • 1 100g pkt of regular sized marshmallows (coloured ones look better!)
  • 1/3 cup of shredded coconut

Method

  1. Peel and segment mandarins. If there are pips, gently make a small nick through the surface of the mandarin segment with a knife and remove, trying not to release the juice.

  2. Place mandarin segments, drained pineapple pieces and marshmallows in large bowl.
  3. Add yoghurt and gently fold in mixture.
  4. Sprinkle shredded coconut on top.
  5. Serve immediately or chilled.
