Marshmallow Fruit Yoghurt
Ingredients
- 1kg tub of natural light yoghurt
- 5 mandarins (fridged)
- 1 well drained 250g tin of pineapple pieces (fridged)
- 1 100g pkt of regular sized marshmallows (coloured ones look better!)
- 1/3 cup of shredded coconut
Method

Peel and segment mandarins. If there are pips, gently make a small nick through the surface of the mandarin segment with a knife and remove, trying not to release the juice.
- Place mandarin segments, drained pineapple pieces and marshmallows in large bowl.
- Add yoghurt and gently fold in mixture.
- Sprinkle shredded coconut on top.
- Serve immediately or chilled.
