Flavour of the Month
Lentil Soup (serves 4)
Ingredients
- 2 onions
- 1 turnip
- 1 packet red lentils
- 2 stock cubes
- 4 cups of hot water
Method
- Chop all vegetables and place in pot with lentils and water.
- Simmer for 1 hr, stirring occasionally.
- Crumble in the stock cubes and simmer for 5 minutes more.
- Lentils will soften and thicken.
