Flavour of the Month

Lentil Soup (serves 4)

Ingredients

  • 2 onions
  • 1 turnip
  • 1 packet red lentils
  • 2 stock cubes
  • 4 cups of hot water

Method

  1. Chop all vegetables and place in pot with lentils and water.
  2. Simmer for 1 hr, stirring occasionally.
  3. Crumble in the stock cubes and simmer for 5 minutes more.
  4. Lentils will soften and thicken.
