Fruit Trifle

Ingredients

Use tinned and/or fresh fruit to make fruit salad. Suggestions include:

  • 1 tin apricots, drained and chopped.
  • 1 fresh apple, cored and chopped.
  • 1 fresh pear, cored and chopped.
  • 1 banana, chopped.

Other ingredients:

  • 1 packet low joule jelly (any flavour)
  • 2 tablespoons custard powder
  • 2 cups low-fat milk
  • 1 small tub low-fat natural yoghurt
  • 1 teaspoon vanilla
  • fresh fruit such as kiwi fruit for decoration.

Method

  1. Make jelly according to instructions. Cool.
  2. As it begins to set, pour it over the fruit salad in a large serving bowl.
  3. Allow to set in fridge.
  4. Make custard according to instructions. You may find it necessary to add slightly more custard powder than instructions to get a thicker setting mixture. It is not necessary to add sugar to custard as fruit is sweet enough.
  5. Cool custard mixture, then pour over jellied fruit mixture.
  6. Mix vanilla with yoghurt and spread over custard.
  7. Chill in fridge, then decorate with sliced fruit.
