Flavour of the Month
Fruit and Seed Coleslaw (Serves 4)
Ingredients
- 1 red skinned apple
- 2 pears
- 1 lemon
- 1 medium carrot
- 1 cup finely shredded cabbage
- ½ cup low-fat natural yoghurt
- 1 tablespoon sesame seeds
- 2 dried figs, finely sliced
Method
- Peel and core the apple and pears and slice thinly.
- Squeeze the lemon and pour the juice over the fruit to prevent browning.
- Scrub carrot and cut into strips.
- Toss the pear, apple, carrot and cabbage together.
- Cover and refrigerate for an hour or so to allow the flavours to mix.
- Pile the yoghurt in the centre and sprinkle with the nuts and seeds.
