Fruit and Seed Coleslaw (Serves 4)

Ingredients

  • 1 red skinned apple
  • 2 pears
  • 1 lemon
  • 1 medium carrot
  • 1 cup finely shredded cabbage
  • ½ cup low-fat natural yoghurt
  • 1 tablespoon sesame seeds
  • 2 dried figs, finely sliced

Method

  1. Peel and core the apple and pears and slice thinly.
  2. Squeeze the lemon and pour the juice over the fruit to prevent browning.
  3. Scrub carrot and cut into strips.
  4. Toss the pear, apple, carrot and cabbage together.
  5. Cover and refrigerate for an hour or so to allow the flavours to mix.
  6. Pile the yoghurt in the centre and sprinkle with the nuts and seeds.
