Curried Banana Salad (serves 6)

Ingredients

  • 1 teaspoon curry powder
  • 100ml plain yoghurt
  • 5 bananas
  • ½ cup celery, diced
  • ½ cup unsalted cashew nuts
  • ½ cup raisins

Method

  1. Mix curry and yoghurt evenly.
  2. Mix all other ingredients, pour the curried yoghurt over and fold through.
  3. Serve chilled. Great served with cold chicken, tuna or salmon.
