Flavour of the Month
As we approach summer this is a great dish for picnics or outdoor
eating. Vary the ingredients with whatever is in season.
Citrus Chicken Salad
Serves 4
Ingredients
375 g (12oz) cooked skinless chicken fillets, cut into strips
1 cup (250 g/8 oz) cooked noddles or pasta, drained, rinsed and cooled
4 shallots, diced
150g snow peas, blanched
1/2 red capsicum, sliced
1 orange, cut into pieces
1/2 cup pecans
juice of 1 orange
1 teaspoon salt-reduced soy sauce
freshly ground black pepper
Method
Place chicken, noodles, shallots, snow peas, capsicum and
orange pieces in a salad bowl. Toss to combine.
Combine orange juice and soy sauce. Pour over salad and toss
to coat ingredients. Season to taste with pepper. Refrigerate until ready to
serve.
Health Tip
Salt reduced soy reduces the sodium
content
