Banana Almond Yoghurt Rice Cream

Ingredients

  • 1½ cups cooked rice white or brown
  • 1 cup unflavoured skim or low fat yoghurt
  • 1 tablespoon sugar
  • 1 medium banana, sliced
  • 1/3 cup slithered almonds

Method
Combine rice, yoghurt, sugar and banana in a bowl.

Spoon mixture into four individual ramekins and sprinkle with almonds.

Refrigerate.
