Make this colourful salad in Winter when oranges and mandarins are at their best.

Winter Fruit Salad

Serves 4

Ingredients

¾ cup (185 mL/6 fl.oz) fresh orange juice
2 tablespoons raisins
1 tablespoon brandy (optional)
1 tablespoon honey
1 orange, peeled and segmented
6 mandarins, peeled and segmented
3 tablespoons flaked almonds, rough chopped

Method

Combine orange juice, raisins, brandy and honey in a glass bowl.  Fold through orange and mandarin segments.

Cover and refrigerate until required.  Remove from refrigerator 20 minutes before serving.  Just prior to serving sprinkle with almonds.

 Health Tip

Citrus fruits are an excellent source of vitamins, in particular Vitamin C.
