Tropical Fruit Loaf

Ingredients

(makes 12 slices)

  • 15 dried pear halves
  • 0 dried apricots
  • 2 cups (500ml) water
  • 1 ripe banana
  • 1 ½ cups (200g) wholemeal self-raising flour
  • 60g chopped almonds
  • 60g dried pawpaw, chopped
  • 60g dried mango, chopped
  • teaspoon cinnamon

Method

  1. Place pears, apricots and water in a saucepan, bring to the boil, cover and simmer for 5 minutes. Remove pears and set aside. Place apricots, cooking liquid and banana in a food processor or blender and process until smooth.
  2. Pour fruit mixture into large mixing bowl and stir in flour, almonds, pawpaw, mango and cinnamon. Spoon a quarter of the mixture into a lightly greased and lined 25x10cm loaf pan. Top with a third of the pears. Repeat layers until all mixture and pears are used, ending with a layer of mixture.
  3. Bake at 180C for 50 minutes or until cooked when tested. Stand loaf in pan for 5 minutes before turning onto a wire rack to cool.
