Tropical Fruit Loaf
Ingredients
(makes 12 slices)
- 15 dried pear halves
- 0 dried apricots
- 2 cups (500ml) water
- 1 ripe banana
- 1 ½ cups (200g) wholemeal self-raising flour
- 60g chopped almonds
- 60g dried pawpaw, chopped
- 60g dried mango, chopped
- teaspoon cinnamon
Method
- Place pears, apricots and water in a saucepan, bring to the boil, cover and simmer for 5 minutes. Remove pears and set aside. Place apricots, cooking liquid and banana in a food processor or blender and process until smooth.
- Pour fruit mixture into large mixing bowl and stir in flour, almonds, pawpaw, mango and cinnamon. Spoon a quarter of the mixture into a lightly greased and lined 25x10cm loaf pan. Top with a third of the pears. Repeat layers until all mixture and pears are used, ending with a layer of mixture.
- Bake at 180C for 50 minutes or until cooked when tested. Stand loaf in pan for 5 minutes before turning onto a wire rack to cool.
