Flavour of the Month

These  Kebabs make a quick and easy dinner that can be cooked on the BBQ.  You can choose whether you want to use fish, lamb, beef, pork or tofu.  This recipe features a simple marinade, ideal for almost any type of "meat". If you're using tofu instead of "meat", use the marinade featured in Chicken and Vegetable Stir Fry with Tofu. The vegetables listed below can be substituted for any fruit or vegetables that you like. Enjoy!

Surf 'n' Turf Kebabs

Makes 15

Ingredients

Kebabs

500g of "meat" Try any of these: firm white fish cutlets / lean beef / lean pork/ lean lamb / firm tofu

2 capsicums, diced (2 cm cube)

1 onion, cut into wedges

1 punnet cherry tomatoes or 2 tomatoes, cut into wedges

150 g baby mushrooms

1 x 440 g can pineapple pieces in natural juice (reserve juice)

Marinade

¼ cup oil

2 tablespoons natural pineapple juice (from can) or juice of ½ a lemon

2 tablespoons wine (optional)

2 cloves garlic, crushed

½ teaspoon chopped fresh ginger or ½ teaspoon ground ginger

2 tablespoons herbs (try fresh or dried mint, parsley, or rosemary)

Method

Prepare marinade in a flat dish.  Add "meat", toss and allow to marinate while preparing vegetables.   Soak wood kebab skewers in water.

Thread "meat" and vegetables onto kebab skewers.

Grill Kebabs for 8-10 minutes until cooked.

Turn the kebabs occasionally.

Serve with a salad on a bed of rice. Dollop with natural low-fat yoghurt. Garnish with parsley and ground pepper.

Health Tip

To lower fat content use lean cuts of "meat"

Grilling is a low fat cooking technique

Serve with with a mixed green salad to increase your food variety
