Recipe of the Week

This recipe is fantastic for showing how creative you can be with canned vegetables or even left over  Ratatouille, Peperonata, or stir-fry! This dish is guaranteed to be a favourite that you will add to your repertoire! If you want a quick and easy dinner, then make sure you try this dish as it only takes 8 minutes to prepare and is ready in half an hour!  Eggs play a staring role in this dish.  It is important to remember that whilst eggs contain a significant amount of cholesterol, they are not high in saturated fat (click here to find out more about cholesterol).  An interesting variation of this dish can be made by using canned asparagus or mushrooms instead of corn.  Enjoy!
