Low Fat Orange Muffins
2 cups self-raising flour
½ teaspoon bi-carb soda
½ cup low-fat vanilla yoghurt
½ cup freshly squeezed orange juice
¼ cup sugar
1 egg, lightly beaten
2 tablespoons low joule marmalade
Step 1 Pre-heat oven to 200 C. coat a 12 cup muffin tray with cooking spray.
Step 2 Sift the flour and bi-carb soda into a medium bowl.
Combine the yoghurt, orange juice and sugar and add to the flour.
Add the egg and stir to combine, being careful not to over mix.
Step 3 Spoon mixture into the prepared tray and bake for 12 to 15 minutes.
Step 4 Heat the marmalade in the microwave for 30 seconds.
Brush over cooked muffins. Serves 12. Enjoy!
