Flavour of the Month

The health benefits of eating fresh nuts are becoming widely recognised.  Nuts are a rich source of nutrients and contain monounsaturated and polyunsaturated fats, proteins and carbohydrates, as well as a wide selection of minerals and vitamins.  They are also a rich source of monounsaturated and polyunsaturated fats.  

Mango, Pecan and Chicken Salad shows you a simple, tasty and nutritious way to incorporate pecans into your favourite dishes!  Experiment with this recipe by substituting the mango for  peaches, nectarines or a  juicy orange.  Enjoy! 

Ingredients

1/2 mango, sliced
1/2 cup Riverside All Australian Pecans
1 cup sliced cooked chicken
1/2 stick celery, sliced
6 snow peas or green beans
2 spring onions, chopped
1 tablespoon chopped parsley
Light Curry Dressing
1/2 cup extra light sour cream
1/4 teaspoon curry powder
pepper

Method

Place snow peas or beans in boiling water for 1-2 minutes, then rinse under cold water. (If using green beans, slice into thirds.)

In a bowl, combine salad ingredients.

In a small bowl, combine dressing ingredients and refrigerate.

Serve Mango, Pecan and Chicken Salad with dollops of Light Curry Dressing.

Health Tip

Pecans are a good source of fibre, protein, vitamins (including B-group), minerals (including iron and zinc)

Fruit and vegetables are a good source of antioxidants
