These  MV Burgers are just perfect for summer.  They show just how quick and easy a dinner can be prepared on the BBQ.  The MV Burgers contain extra vegetables so they are even tastier than your usual meat patty.  Prepare them early and keep in the refrigerator for an hour to help retain their shape.  These burgers are served with vegetable parcels.  The vegetables for the Vegetable Parcels can be substituted for any combination that you like.   Enjoy!

MV Burgers

Serves 5

Ingredients
400g lean diet mince
1 onion, finely diced
1 zucchini, grated
1 carrot, grated
2 cloves garlic, chopped
1/4 teaspoon chilli powder or paprika
freshly ground black pepper
1 tablespoon dried herbs
1 tablespoon fresh herbs, chopped finely
2 tablespoons Worcestershire sauce
1 tablespoon sweet chilli sauce
½ - 1 cup quick-cook rolled oats (depends on consistency of mixture)
1 egg, lightly beaten

Method
In a large mixing bowl, add mince, zucchini, carrot, garlic, spices, herbs, sauces, breadcrumbs and egg. Mix well.

Shape into hamburger shape. Refrigerate until you are ready to BBQ. Serve with a salsa, lettuce, tomato and reduced fat cheese on a wholemeal roll.


Vegetable Parcels

Serves 5

Ingredients
3 cups of various chopped vegetables:
    eg.    2 large carrots, thinly diagonally sliced
            200g broccoli florets
            1 capsicum, strips
            100g mushrooms, halved

Method
To make small parcels, use an aluminium foil square of 15cm x 15cm.

Place vegetables in the square, roll up and place on the BBQ in a warm place. Cook until vegetables are tender (approx 12 minutes).

Health Tip

Lean mince is low in fat and a good source of iron

Carrot and zucchini give these burgers extra vitamins and fibre

Vegetables are an excellent source of antioxidants
