The Festive Ice Cream Pudding
2 cups of dried mixed fruit
3/4 cup toasted almonds, chopped
1 1/2 teaspoons mixed spice
2 litres of low fat ice-cream
60 ml apple juice or brandy
Step 1
Place fruit in a large mixing bowl, pour apple juice (or brandy) over fruit,
leave for a few hours. Add almonds and mixed spice.
Step 2
Fold together with softened ice-cream. Line a 6-8 cup pudding basin with plastic
wrap, spoon in mixture.
Step 3
Cover with plastic wrap and freeze overnight.
