This winter warming casserole is incredibly easy to prepare! The capsicums in this dish not only add a fantastic sweet flavour, they also add a splash of colour! Serve this dish with rice, pasta, or cous cous.

Sweet Capsicum Chicken Casserole

Serves 4

Ingredients

1 tablespoon oil
8 chicken pieces (e.g thighs or drumsticks)
1 large onion, chopped
1 small red capsicum, sliced
1 small yellow capsicum, sliced
1 green capsicum, sliced
1 large carrot, sliced
2 sticks celery, sliced
1 tablespoon plain flour
1 tablespoon no-added-salt tomato paste
1 teaspoon dried oregano
1 x 440g can tomatoes
1 cup (250 mL) chicken stock
1 tablespoon fresh basil (or 1 teaspoon dried)
freshly ground black pepper

Method

In a large saucepan or dutch oven, heat oil and cook chicken pieces for 5 minutes each side (allowing to almost cook through).

Stir through onion and capsicum allow to cook for 7 minutes.

Add carrot and celery to casserole dish and cook for a further 5 minutes.

Stir in flour, tomato paste, oregano, tomatoes and stock. Cover and simmer for 30-45 minutes.

Just before serving, stir in the basil and season to taste with pepper.
