Recipe of the Week

This recipe shows an easy and tasty way to add variety to your usual barbecue, and is sure to tempt even the most traditional barbecue enthusiast!   This recipe uses chicken, but it can be easily substituted for pork, or tofu.  Regardless of what ever "meat" you choose, you could always threaded the chicken onto skewers and make it into kebabs.  Chicken thigh fillets are ideal to grill using an indoor grill, char-grill pan or barbecue as thigh fillets have lots of flavour and are very tender. Char-Grilled Chilli Chicken is served with a mixed green salad and Pineapple Salsa that has loads of taste and is great for a barbecue. Enjoy!

Char-Grilled Chilli Chicken with
Pineapple Salsa

Serves 4-6

Ingredients

400g Skinless chicken thigh fillets
Marinade
1 tablespoon olive oil
2 teaspoons chilli paste
(e.g. sambal oelek)
2 teaspoons crushed garlic
2 teaspoons crushed ginger
1 tablespoon brown sugar
1 tablespoon lemon juice
2-3 tablespoons salt reduced soy sauce

Serve with
3 cups mixed salad greens
Salsa
450g can pineapple pieces in natural juice, drained
1 tablespoon chopped fresh mint
1 teaspoon grated ginger
1 tablespoon lemon juice

Method
Coat chicken with marinade, leave refrigerated for at least 15 minutes or a few hours.
Heat grill, brush with oil and cook chicken on one side for about 5 minutes, turn over onto other side and cook until chicken is cooked through.
Meanwhile prepare the salsa. Combine ingredients and refrigerate until ready to serve.
When chicken is cooked slice and serve on mixed greens with Pineapple Salsa.
