Flavour of the Month

Mexican food has grown in popularity in Australia over the last few years, so much so, in fact, that we know that there is much more to Mexican cuisine than tacos and nachos.  Burritos are made using a flour tortilla that is rolled around a savoury filling, in this case with a mince and bean filling that can be covered with a spicy sauce.  The tortilla is a round, flat Mexican bread central to Mexican cuisine.  The tortilla is made from stone ground corn or wheat flour.  A tortilla can be prepared in many ways; one of which is a "Burrito". Burritos are a hit with the whole family kids and grandparents alike because it makes for a very quick dinner! Enjoy!

Burritos

Serves 5

Ingredients

1 medium onion, chopped
1 clove garlic, chopped
500g lean mince (e.g. pork)
1 teaspoon ground coriander
or 1 tablespoon fresh coriander, chopped
1 teaspoon ground cumin
˝ teaspoon chilli powder
1 x 400g can red kidney beans
1 bottle pasta sauce
or 1 x 440g can peeled tomatoes, chopped, (keep juice)
Serve with
1 packet burritos/ fajitas (soft tortillas)
and a combination of the following:
3 medium tomatoes, chopped roughly
1 lettuce, shredded
1 carrot, chopped or grated
˝ medium cucumber, chopped
1 capsicum, chopped
100g mushrooms, sliced
1 avocado, sliced
5 tablespoons Light Sour Cream

Method

1. In a large saucepan heat oil, add onion and garlic. Sauté for a few minutes until onions are translucent.

2. Add mince and cook until brown.

3. Meanwhile prepare fajitas/ burritos according to directions on the packet.

4. Add spices, and allow to cook for a few minutes.

5. Add beans and pasta sauce or can chopped peeled tomatoes. Allow to heat through.

6. Serve immediately with tomato, lettuce, cucumber, capsicum, mushrooms, avocado and a dollop of light sour cream.

Health Tip

Kidney beans are a good source of fibre and protein

To lower fat content use reduced fat varieties of sour cream and cheese
