Aussie Apple Dessert Recipes
Serves 4
Cooking Time: 30 minutes
Ingredients
- 1 litre pink grapefruit juice
- 1 cup sugar
- 4 crisp red apples, peeled halved and cored
- Segments from 4 pink grapefruit to garnish (optional)
- Mint to garnish (optional)
1. Combine juice, sugar and apple halves.
2. Bring to the boil, and turn down to a gentle heat. Cover loosely and simmer over a gentle heat for 20 - 30 minutes until apples are tender.
3. Cool to room temperature and refrigerate.
4. To serve, arrange poached apple onto serving plates and spoon over syrup. Serve alone or with grapefruit segments.

Cooking Time: 20 - 25 minutes
Ingredients
- 4 Beurre Bosc Pears Passionfruit Syrup
- 1 cup self raising flour 2 passionfruits
- ¾ cup of caster sugar ½ cup sugar
- ½ cup skim milk ¼ water
- 30g low fat margarine, melted ¼ orange juice
- ¼ tsp vanilla essence
- Pear Yoghurt
- 1 Beurre Bosc pear
- 150g low fat vanilla yoghurt
Method
1. Preheat oven to 180ºC.
2. Peel and quarter the pears, remove each core and cut each quarter into cubes. Set aside.
3. Sift flour and caster sugar into a large bowl. Add remaining ingredients. Stir well to combine. Fold through the pears.
4. Spray 6 x ¾ cup capacity ramekins (or a muffin tray) with cooking spray. Fill the ramekins till ¾ full with the cake mixture.
5. Bake in preheated oven for 20 – 25 minutes
6. In small saucepan combine passionfruit pulp, sugar and water, simmer for 5 minutes. Pour in orange juice and combine. Remove from heat.
7. To make pear yoghurt, peel and dice pear finely. Combine with vanilla yoghurt.
8. Pour syrup over pear puddings and serve with the pear yoghurt.
Serves 4
- 5 apples peeled, cored and chopped
- Juice from 1 lemon
- 3 tbsp. water
- 3 tbsp. sugar
- Pulp from 3 passionfruit
Coconut Crumble
- 1 cup oats
- 1/2 cup coconut
- 1/2 cup plain flour
- 1/2 cup sugar
- 2 tbsp. soft butter
- Have peelers handy for the children to peel the apples.
- Chop the cored apples and place them with the water, lemon and sugar into a saucepan and cook for 8 – 10 minutes until apples have softened. Allow to cool.
- Slice the passionfruit and have the children scoop out the pulp.
- Fold the passionfruit pulp through the apples. Spoon into 4 individual dishes or alternatively 1 large dish.
- Meanwhile measure all the crumble ingredients into a large bowl ready for a child’s hand to rub though and combine.
- Sprinkle the crumble topping over the apple and bake in a moderate oven 180C for 20 – 30 minutes until golden and heated though. Serve hot or warm.

Cooking Time: 35 - 40 minutes
Ingredients
- 4 Williams Pears
- 4 cloves of garlic
- 1 tsp white pepper
- ¼ cup of olive oil
- 1cup chicken stock
- 2 Tbsp white wine vinegar
- 1 Tbsp seeded mustard
- 6 sprigs fresh thyme
- 2 Tbsp maple syrup
Method
1. Preheat oven to 200ºC.
2. Peel pears and place in deep baking tray.
3. In a medium bowl combine garlic, white pepper, olive oil, white wine vinegar. Stir through seeded mustard and thyme sprigs.
4. Pour marinade over the pears and roast in preheated oven for 35 – 40 minutes. Baste occasionally. In the last 10 minutes of cooking drizzle with maple syrup.
5. Serve with beef sausages, and garnish with thyme sprigs.
