Roast Vegetable Salad

- Any quantity of left over roast vegetables
- Same quantity of salad greens ~ rocket is especially good
- 1 hard-boiled egg per person
- 1 tablespoon lemon juice
- 1 tablespoon yoghurt
- 2 teaspoons olive oil
Mix the last three ingredients together.
Cut vegetables into approximately 2cm cubes.
Tear greens and slice eggs.
Toss all ingredients together.
