Roast Vegetable Salad

  • Any quantity of left over roast vegetables
  • Same quantity of salad greens ~ rocket is especially good
  • 1 hard-boiled egg per person
  • 1 tablespoon lemon juice
  • 1 tablespoon yoghurt
  • 2 teaspoons olive oil

Mix the last three ingredients together.
Cut vegetables into approximately 2cm cubes.
Tear greens and slice eggs.
Toss all ingredients together.
