No-fat No-egg Fruit Cake

- 500g dried mixed fruit
- 60g dried apricots, chopped
- 2 teaspoons honey or golden syrup
- 1 1/2 cups orange, apple, apricot or pineapple juice
- 1 cup cooked mashed pumpkin or potato
- 1 1/2 cups SR flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon mixed spice
- 75g chopped nuts or ginger
Place dried fruit, apricots, fruit juice and honey in a saucepan; bring to the boil and simmer about 5 minutes. Allow to cool.
Add the mashed potato or pumpkin to the fruit and mix well. Sift the flour, mixed spice and bicarbonate of soda and add to the fruit. Mix evenly. Add the chopped nuts or ginger and mix through. Grease a 20cm square or round cake tin with a little oil and line the base with baking paper. Bake at 160°C for 1 1/4 hours.
