Hummus, Salad and Avocado wrap

  • 1 medium red capsicum
  • oil spray
  • 2 lavash breads or 2 sheets mountain bread
  • 100g hummus
  • 100g baby spinach leaves or rocket
  • 1 avocado, peeled and sliced

Remove seeds from capsicum and cut into thin strips.
Spread bread with hummus and top with spinach or rocket, capsicum and avocado. Roll up firmly in plastic wrap to secure and keep fresh. Cut bread through the wrap into serve-size pieces.

Serves 4.
