Balsamic Bean Salad

- 440g canned 3 or 4 bean mix
- 1/2 medium cucumber, diced
- 1 large tomato, chopped roughly
- 1/2onion or 2 spring onions, chopped
- 2 teaspoons balsamic vinegar
- 2 teaspoons olive oil
- 1 tablespoon each of mint and parsley, chopped
- a few shakes of pepper
Mix together beans, cucumber, tomato and onion.
Add vinegar, olive oil, herbs and pepper.
Toss and coat well.
Chill salad before serving.
Serves 4-6.
