Balsamic Bean Salad

  • 440g canned 3 or 4 bean mix
  • 1/2 medium cucumber, diced
  • 1 large tomato, chopped roughly
  • 1/2onion or 2 spring onions, chopped
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons olive oil
  • 1 tablespoon each of mint and parsley, chopped
  • a few shakes of pepper

Mix together beans, cucumber, tomato and onion.
Add vinegar, olive oil, herbs and pepper.
Toss and coat well.
Chill salad before serving.

Serves 4-6.
